12 boiled eggs
1/2 cup mayonnaise
2 T. Mustard
1/4 tsp. Salt
A few grinds of Pepper
Paprika
Eggs can be temperamental when it comes time to peel them, so you should always boil double what you actually need in the end. Extra eggs can be used up in salads or Scotch Baked Woodcock. Peel the eggs right away, as soon as you can handle them, for your best chance at success.
Prepare and peel the eggs.
Cut each in half and put the yolks into a bowl or food processor. Add the other ingredients and mash or process until smooth.
Spoon or pipe into the egg halves and sprinkle lightly with the paprika.
